Recipe: Starter of Beef Carpaccio with Parmesan cheese and a Pesto dressing Present the sliced Beef Carpaccio on a plate and sprinkle with the fresh Parmesan cheese which you can also grate yourself. Heat the olive oil in a frying pan and very briefly brown the pine nut kernels. Remove the kernels from the pan and dab them with kitchen roll and spread them evenly over the Beef Carpaccio. Lastly, spoon the Pesto dressing evenly over the dish.
