Our bacon is made from the pork rib with a small rind of fat. Once the selected cuts have been cured, the bacon is smoked naturally on pure beech wood, then dried and matured in our climate controlled areas. Bacon makes a good savoury sandwich filler with a delicious tender ‘bite’, and is also an excellent ingredient for a main course.
Recipe: Main course of bacon with lentils Soak the lentils in water overnight, then cook in stock until tender. Finely chop the shallots and cut the gherkins into cubes. Slice the tomatoes, green pepper and olives. Brown all these vegetables in olive oil, and add the tomato puree followed by the stock. Then add the bacon. Mix all of these ingredients with the lentils, place in an oven-proof dish and sprinkle with the Parmesan cheese. Cook the dish in an oven preheated to 280 °C, for 10 minutes.
